chocolate avocado mousse recipe
I was skeptical when I first heard about using avocados to make chocolate mousse, but now I'm hooked. This dessert is not only delicious but is nutritious as well.
- 2 cups rich, ripe avocado
- ½ cup maple syrup
- 2-4 tablespoons sugar
- 1-2 teaspoons vanilla extract
- 1 teaspoon aged balsamic vinegar
- 1 cup pure cocoa powder
- fresh raspberries
- shaved chocolate
In a food processor, blend avocado, maple syrup, sugar, vanilla extract, balsamic until smooth and creamy.
Add cocoa powder and blend until smooth. To prevent lumps, sift the cocoa powder before adding. Spoon into a bowl and top with shaved chocolate and raspberries.
Store leftovers in a tightly sealed container in the fridge for 4 days, or in the freezer for a month.
